Protein Breakfast Cookie

The original protein breakfast cookie. This is a delicious and healthy make-ahead breakfast recipe that tastes just like dessert! The oats absorb the milk and soften overnight, so the next morning, you can grab a spoon and enjoy. Add your favorite protein powder and customize with mix-ins of choice!

high protein no bake breakfast cookie

Here is the breakfast cookie how-to I’ve been promising:

In a small bowl, add 1/3 cup oats, 1 tbs nut butter of choice (I used raw almond) and 1/2 scoop protein powder (you can use chocolate or vanilla!)

Stir to combine and use the spoon to break up the nut butter until you have a nice crumbly mixture.

Add 1/8-1/4 cup milk of your choice (For me, unsweetened vanilla almond milk) and mix until fully moistened

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

Next, add in 1/2 mashed banana and stir well

Now the fun part- pick the mix-ins! You can get creative with this one– I’ve tried banana, raisins, pumpkin, chocolate chips, ground espresso beans… add anything you like 😀

Stir in your mix-ins of choice and season with a little cinnamon and/or vanilla

Plop the mixture onto an appetizer-sized plate and with the back of your spoon, flatten it into a round shape with equal thickness throughout

Put the cookie in the fridge overnight. It will harden slightly from the nut butter and the oats will soften from the milk.

Next morning, grab a spoon and enjoy 😀

Vita Mix, how did I live without you for so long??? – The Fitnessista

Hey hey hey!!!

How are ya? Can you believe tomorrow’s Friday?!? I can’t either.. but I will happily embrace the weekend 😀

Someone is still a little tuckered out from our trip:

001

(I thought it was so cute that she matches the crocheted blanket)

I started out the day with a homemade continental b-fast

2 pieces of Ezekiel bread (1 topped with Polaner, the other topped with 2 egg whites), cantaloupe and blueberries

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

 001

With a giant cuppa Joe, it was a fabulous breakfast

I did some stuff around the casa, including sorting through 3.5 weeks of mail and ran to school to drop off some paperwork.

For snack, I had a Christmas-flavored (aka Gingersnap Larabar)

002

I took the puppers on their 2 mile walk, then came home to play with the Vita Mix!!

I seriously can’t believe that I didn’t get one of these sooner. It is OUTTA CONTROL—you can make anything! Appetizers, soups, fondues, juices, milks, smoothies, ICE CREAM, dough, the list goes on and on..and on

I studied the cookbook that came with the Vita Mix last night and after getting a feel for the settings (there’s variable speed in which you can increase and decrease the speed depending on what you’re making, and high speed in which I’m pretty sure you could put an umbrella in the blender and make umbrella butter).  I came up with this concoction:

Orange-less OJ

-2 organic carrots

-1 small banana

-1/2 cup cantaloupe

-1 cup almond milk

-1/3 cup water

-1 packet Stevia

-1/2 cup ice

003_thumb

On variable speed, turn the power to on and increase the speed level from 1-10 and blend for 1 minute.

Voila:

004_thumb

It made two pina colada glasses full of this sweet and surprisingly filling creation. It tasted so light and I loved the fact that I was eating two giant carrots!

I hit up the gym with my friend Jeni and did some cardio and weights:

Elliptical30 minutes, Hill 2 programChest press20 lbs, 3 sets of 12Shoulder press20 lbs, 3 sets of 12Compound row50 lbs, 3 sets of 12Seated row60 lbs, 3 sets of 10Triceps Extension50 lbs, 3 sets of 12Stability ball back extensionBody weight, 3 sets of 12Hammer curls10 lbs each, 3 sets of 12Lateral raises5 lbs each, 3 sets of 12Total time: 1 hr 15 min

When I got home, it was lunchtime so I was stoked to use the Vita-Mix again

Raw Chickpea Marinara

-1/2 package of sundried tomatoes

-1/3 cup chickpeas (you can use soaked dry chickpeas or the ones a la can)

-1/3 cup water

-juice of 1/2 lemon

-dried basil and oregano

-sprinkle of garlic powder

005_thumb

On variable speed, turn the power on and increase speed from 1-4. Stop after 30 seconds and scrape the sides down and continue blending. Add more water if needed.

I shaved a yellow squash with a veggie peeler as my “noodles” and topped with the sauce:

006_thumb

It was delicious!! I seriously think it’s love at first sight with the Vita Mix. The pilot seriously needs to stop going away.. I’ve fallen in love with a high school vampire and a kitchen appliance since he left.

When I was finished with the amazing “pasta”, I was craving something starchy (and didn’t want bread), so I opened my first package of polenta. I used 1/3 of the roll and cut it up and zapped it in the microwave for 90 seconds.

007_thumb

I topped it with sea salt and pepper, and it was pretty good, but I got the feeling that I wanted it to taste sweeter. Does anyone have an amazing polenta recipe they’d like to hook me up with? I still have 2/3 of a roll left to use 😀

After snack, I went to an hour yoga class. I really enjoyed it but I’m thinking no matter what, I’ll always be more of a pilates kinda girl.

After yoga, I met up with Jeni and Jamie at Baberitos for dinner. I forgot my camera (!) but I’ve had this meal a few times before: salad with tofu, guac, black beans, mushrooms, cucumber, jalapenos, pico, salsa and olives. It was muy bueno.

Now I’m watching Grey’s, having trouble getting into it (this season just isn’t doing it for me), sipping some green tea and stoked for Friiiiiiiday!

Tomorrow I’m training a friend, starting my first day at a new job (ack!), walking the puppies on base, going for a run, then dinner with the girls 😀

Hope you all have a wonderful night!

Much love,

G$

Green chile egg casserole – The Fitnessista

Hey everyone!!! Hope you had a great weekend and/or Easter/Passover 😉

002

Viesa rocked the bunny ears:

007

I had such a nice day relaxing with the pilot. We’ve been gone so much over the weekends that we haven’t had a lot of chill time around the casa, so it was pretty amazing to just hang out for a day.

We slept in (again) and I made some brunch 😀

We each had something sweet.

Cinnamon rolls for the pilot:

001

(They’re the Pilsbury orange cinnamon ones—they’re his favorite. He said not to judge him, haha)

Oat branmeal (1/4 cup oats and 1/4 cup bran) for myself:

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

003

And something savory for us both:

GREEN CHILE EGG CASSEROLE

007

This recipe was SO EASY and delicious!!! My nana (on my dad’s side of the family, who is a caterer) makes something similar to this every year on Easter and I knew I’d be craving it.

Here’s the recipe:

-6 eggs

-1/2 small container of sour cream (we used the Light kind)

-1 small can of diced green chiles

-1 cup shredded cheese of your choice (I had raw organic cheddar on hand so I threw that in there)

-garlic powder, salt and pepper

1. Spray a small casserole dish with nonstick spray and preheat the oven 350*.

2. Beat eggs in a bowl and mix in the sour cream mixture

3. Evenly spread out the green chiles on the dish and then top with the cheese. Pour egg and cheese mixture on top.

4. Bake for 30 minutes until cooked through and lightly browned.

I had two small slices topped with Texas Pete:

008

The pilot got a new Wii game in his Easter basket, so while he played that, I played Betty Crocker 😉

I made some dehydrated flat bread from Ani’s Raw Food Kitchen:

009

I’m excited to make a sandwich with it today!!!
I also made some of the cookies Jenna is famous for: Super Charge Me! Cookies from Eat, Drink and Be Vegan:

010

Of course I had to try one:

011

So. Insanely. Delicious.

I love cookies that I can feel good about eating, too. These little guys have no white flour or white sugar in them- they’re sweetened with maple syrup and have oat, flax and spelt flour- and I used goji berries as my dried fruit of choice and will definitely be making these again!

The pilot and I cleaned the casa for most of the day, had a small lunch –I made a smoothie and some fruit- and then it was dinnertime.

I sautéed some zucchini with olive oil, onion and garlic, then added WFs eggplant marinara and shrimp. Seasoned with salt, pepper, and red pepper flakes and topped with tomato and basil:

014

Roasted asparagus with sea salt, pepper, garlic and lemon:

015

The pilot had shrimp and prosciutto penne pasta (the recipe is in the “Delicious Disney” cookbook) and it was a lovely little meal.

 016

After dinner, we went over to Megan and her pilot’s house and colored Easter eggs for the rest of the evening. It was a blasty 😉

I slept through the gym this morning, and made a coconut breakfast cake. The recipe is in Ani’s Raw Food Kitchen and contains flax, coconut oil, sea salt and water—I added a smashed banana, cinnamon and vanilla to mine and topped it with a little AB and a maple syrup drizzle:

019

With some Joe:

021

And a Super Charge Me! cookie:

023

I’m glad I gave most of them away to friends— they’re a little addicting 😀

Well I’m off to get ready for work then teaching spin and off to school!

Have a wonderful day!!

xoxo,

G

Something to talk about: The 40 days of intuitive eating and meditation are over –unofficially, but I’m going to keep working on it!!! I want to write a post about it (hopefully later tonight) because even though I didn’t write that much about it throughout the course of Lent (sorry about that!) they both posed quite a challenge for me. Since I’m so frantic during the day, it was super difficult for me to silence my mind without falling asleep and as far as the intuitive eating went, I feel like I’ve trained my body to eat at certain times, whether I’m hungry or not. Did you join me in trying to eat more intuitively and take more time for yourself?? How’d it go?

Betty Crocker it up – The Fitnessista

Hey! Happy humpday!! Hope you’re all doing well 😀

I’ve been much less of a klutz today, which has been bueno, and didn’t have appointments at the gym, so I split up my day between making foodie for tonight and lounging poolside. Lovely balance of work and play 😉

I had a green juice of spinach, cucumber, apple and pear:

004

And the usual combo of banana and AB and Ezekiel:

002

003

Then, it was little Betty Crocker time! I cleaned the casa, chopped all of the veggies I’ll be using tonight and also made my favorite Tuscan White Bean dip

005

The sauce for the calzones (2 cans San Marzanos tomatoes –1 can whole peeled tomatoes that I smash with the spoon and 1 can crushed, 3 cloves of garlic, two bay leaves, a small yellow onion, EVOO, sea salt, pepper, fresh basil, rosemary and oregano)

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

006

The same artichoke dip that I made the other night from ED&BV. It’s soooo good and very garlicky

008

I made the vegan chocolate chip cookie dough for the pizookies:

010

Those pizookies are going to be total food porn. Get ready 😉

I had a macaroon-flavored Larabar for snack to keep myself from eating too much dough:

009

And spent a beautiful hour floating on my raft –not the alligator one, the recliner one- in the pool with a good book. My friend Emily came over to say hi, too 😀

When I got back in, I wasn’t the least bit hungry (maybe the heat did it?) so I made a smaller-than-usual salad beast with greens, cucumbers, red bell peppers, tomatoes, 1/2 avocado, lime juice, salt and pepper, topped with a hunk of goat cheese.

012

(My camera has a blurry spot from the artichoke dip fogging it up and me rubbing it with my finger.. might have to get that off. Sorry!)

I’m off to work on Zumba dances and then teaching spin and Zumba. I’ll be back at the casa for girl’s night but un-bloggable due to copious amounts of red wine, so I’ll see ya in the morning with all the pics.

Enjoy your day!

Love,

G

Keep it uuuuuuuuuuup! 😀

Poolside naan – The Fitnessista

Heyyyyy 😀 Hope you’re having a wonderful Saturday so far!!!

You didn’t think I could go more than a week without Indian food, right??? Well, last night I got my fix 😀 We got it to-go (toga with an “o”) and ate it out by the pool.

Baigan Bhartha (spicy!)

006

Whole wheat naan:

007

I live for Indian food… I still can’t believe that I just started eating it a year ago- I’ve been missing out! In college, I had a roommate who was Indian and always wanted to cook for me and I was always like, “Ehhh… it’s ok. But thank you anyway!”. TOTALLY regret that one! So for now, I’m making up for lost naan and spicy delights.

It’s just so good:

008

The pilot swam while I dangled my feet in the water and read. Summer = the best thing ever

There might have been some of this involved:

004

(No sulfites detected?? What does that mean exactly? Haha)

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

I seem to be EXTRA full of antioxidants lately 😉

005

During the day I also had the usual salad beast:

001

Some lightly steamed broccoli for a snack (also covered in goat gouda..and red chili pepper flakes). I really wish I could eat it raw, because steaming it is quite a stinky feat

003

And a “chocolate milk” with hemp milk, Stevia, raw cocoa powder, a frozen nanner, vanilla extract and cinnamon:

002

A-freaking-mazing 😀

This morning started out with a bowl of fruit, since I didn’t have all the juice supplies I wanted (I’m out of my industrial-sized organic spinach tub already).

1 chopped apple and a chopped pear:

009

I made the pilot some french toast:

011

And we went to the health food store, Best Buy (so he could get a Wii game he’s been wanting) and Publizzle.

I had a delicious (and unpictured) Supergreen juice from The Main Squeeze and a couple of hours later, munched a Larabar:

014

That guy I like surprised me with some beautiful roses:

015

Fresh flowers liven up the casa so much!

Gorgeous

016

I also made a giant batch of vanilla macaroons:

017

And some chocolate cinnamon ones 😀 So if I’ve been promising you macaroons, they’ll be in the mail Monday or Tuesday!

I’m off to float on my raft, hit up the gym, then out to dinner! I will most likely not be blogging tomorrow (I seem to have adapted well to the southern lifestyle of having Sunday off) but I’ll be back Monday with this week’s Summer Shape Up workout, the rest of this weekend’s re-cap and a *very exciting announcement* 😀

xoxo,

Gina

Random roadtrip and exciting announcement – The Fitnessista

Hey guys!

019

What a weekend 😀

It’s a good thing I told ya I might not be blogging Sunday, because we ended up taking an impromptu roadtrip to Jacksonville to run some errands. The pilot had to pick up a gift for his group commander, and we figured it would be aight to make a day vacation out of it.

011

On the way down, we munched some amazing raw crackers that Megan made:

010

(Rosemary crackers and carrot Asian-spiced crackers. Megan makes the BEST raw crackers.. mine are an abomination, so I’m very happy she shares with me)

When we first got into town, we were starving so we stopped at a pizza place for the pilot (who devoured a whole pizza… boys and their metabolisms) and Healthy Way Cafe for me.

I had a beautiful veggie juice with carrots, tomato, celery and cucumber

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

013

(Everything at Healthy Way is organic and even the utensils are made out of organic and recycled materials. Pretty sweet, eh?)

And an AWESOME Healthy Way sandwich on Ezekiel with no cheese:

012

It had tomato, sprouts, broccoli, carrots, cucumber, bell peppers, mushrooms and a red pepper vinaigrette. Love at first bite (Lame phrase, but I’m gonna roll with it haha)

We also make a little stop at the beach!

014

I made the above sand heart, and mister artsy mc-creative pants pilot made a perfect replica of Bella, laying on her stomach:

016

Beach bums:

015

We stopped and bought the gift and then headed to Whole Foods for groceries and dinner.

To my utter dismay (and surprise), the hot bar didn’t have a lot of things I wanted to eat, so I got a little container of greek salad and golden beets

020

And some brown rice vegetarian sushi:

021

So good!!! We’re actually driving back in the rain while I type this, but it was such a beautiful day. Here are some of the other foodie highlights from this weekend:

Dinner at Longhorn:

006

For the first time in forever, I actually couldn’t finish my meal! I had 2 out of 3 shrimp skewers, half of the frozen veggies, and took the 3rd shrimp skewer home along with the sweet potato which I gave to the puppers.

009

The pilot’s dinner:

007

(He actually shared a bite of lobster with me this time! Whatta guy)

Shrimp and lobster dip with blue corn and regular tortilla chips:

005

Vino:

004

And my delicious Saturday lunch of tomatoes and cado on romaine hearts:

001

And a cumin-lime dipping sauce made out of raw cashews, lime juice, cumin, sea salt and pepper

002

Absolutely delicious:

003

As far as working out goes, I took it pretty easy this weekend. I did have a full-up cardio/weights sesh on Saturday but took the day off on Sunday. During the week, I do so much teaching (and will be adding two more spin classes each week in July) so the weekend is a perfect time to relax, refresh and get my body ready to teach again.

I promised you guys a special announcement…. so here we go:

Remember when I told you guys about 105degrees academy, the first living foods culinary school in the world?? Well, I’M GOING THERE!!!!!!!!!!!! I’m doing the September session and could not be more excited about it. It feels like it’s been a while since I’ve done something academically that I’m truly and genuinely interested in, and as you guys know, I’m a huge fan of raw foods and the culinary aspect of the lifestyle. Back in the undergrad days, I majored in finance because I was always good at math. I figured it would be good to have a business background because I do anticipate opening my own business in the near future. However, finance wasn’t something I was crazy in love with—I just did it to do it (if that makes sense). I’m so ready to learn about something I’m truly passionate about.

Attending the academy at 105 degrees is going to be such a great experience and I hope you guys will be excited to read about my time there. It’s a 4-week course and I’ll certainly miss the pilot, puppies and friends here in the V-town, but it’s only 4 weeks and I think it’s going to be INCREDIBLE! 😀 Another bonus: Megan might be doing it, too!! Any bloggies out there planning to go to the academy as well??  Please send me an email if you are! 😀

Well, I’m off to get started on the Monday to-do list, but the Shape Up plan for this week will be posted at 3pm and I’ll see ya tonight after Zumba and training!

Take care,

G

image Major (mayjah!) congrats to the summer shape up rockstars who got more than 20 points for last week: Brittany, Heather K. and Meghan N.! Wahoooooooo!

Silence the inner Gina – The Fitnessista

Hey everyone! Monday’s OVER! (well, almost) Thank you again for all of your kind words regarding the exciting announcement. If you’d like to read more about 105 degrees check out this article. And YES I do anticipate having a ton of raw recipes and foodgasms to share for all of you while I’m there 😀

Today was pretty standard. I didn’t walk the puppies this morning because it looked like it could start raining any second, so we stayed home and I had a macaroon:

001

A Cullen juice:

003

(1/4 gigantic beet, 2 carrots and 1 Fuji apple)

and a nanner with AB:

004

I have a new favorite raw almond butter (sorry TJs!) so I’ll be sure to snap a pic of the jar for you guys

I started cleaning the casa – I did laundry, moved all the furniture in our bedroom and vacuumed, dusted, cleaned bathrooms and windows- and also made dinner in advance so it would be ready when we came home tonight.

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

I made guacamole (using the usual ingredients: onion, tomato, mashed cado, lemon juice, garlic powder, hot sauce, cumin, sea salt and pepper)

005

And pinto and avocado enchiladas from Eat, Drink and Be Vegan. If you don’t have this cookbook yet, I’m thinking you might want to get yourself a copy ASAP. Everything I’ve made from there has been perfection.

I de-veganized the pilot’s enchiladas by adding baked, shredded and seasoned chicken and topped it with organic Mexican blend cheese:

009

I topped mine with goat cheddar:

008

I was a little apprehensive about making the enchiladas using small Ezekiel tortillas, but they worked like a charm and not a single one broke in the enchilada rolling process. I also skipped out on using the cashews that the recipe called for because honestly, I don’t want nuts in my enchiladas!

Since I had fresh guacamole in the fridge, I decided to incorporate it into today’s lonchi.

I served it Gena– style on some romaine leaves with a sliced red bell pepper:

006

And also made a Mexican caprese salad (using grape tomatoes, raw goat cheddar, cilantro, sea salt, pepper, cumin and red chili pepper flakes)

007

I came up with that idea on the spot, and it was sooooooo scrumptious 😀

I choreographed for Zumba, met with my Shape Up group, did 20 minutes on the elliptical chatting with my friend Jeni, a 20 minute heart opening flow podcast from Yoga Download (followed by 15 beautiful minutes of meditation in child’s pose- even though I do find it difficult to quiet my mind and silence the inner Gina), then taught Zumba, trained a client and came home to the pilot and puppers.

I was SO stoked that dinner was waiting and I didn’t have to cook when I got home!

The enchiladas were incredible:

010

I also had quite a few of these bad johnnies:

017

(because nothing goes with carbs like more carbs)    😉

dipped into this!

016

Oooooh, and one of these little guys for dessert:

015

Well I’m off to… chill 😛 Have a wonderful night and I’ll see ya tomorrow!

Much love,

G$

Today’s tip: Breathe!!!!! I lot of my clients forget to breathe when we’re strength training. Make sure to exhale on the “grunt” (hardest part) of the movement, like the top of a crunch. You’ll be surprised at how much more effective the workout will become with proper breathing technique.

New macaroon topper – The Fitnessista

Hey guys! How’s your day going?? Things are bueno over here 😀

I started out the morning with a light green juice:

001

(1 pear, 1 apple, 1/2 cucumber. big handful of parsley)

and a walk with the puppen-havens (puppies) 🙂

When we got back to the casa, I had the standard bfast:

002

It fills me up perfectly and I feel like the day hasn’t properly started until I’ve had some almond butter. Speaking of almond butter, THIS is my new favorite:

MY OTHER RECIPES .player-container { position:relative; background: #ACADAC; padding: 10px 20px; margin: 10px auto 10px; width: 100%; /* This can be adjusted to determine size of video before collapsing*/ display: block;}.player-position{ background:#ACADAC;}.player-position span{ font-size:18px; font-family: “brandon_grotesque”,Arial,Helvetica,Geneva,sans-serif; font-weight: bold; letter-spacing: .08em; line-height: 40px; color: #2a2a2a;}

003

Woodstock farms raw almond butter!! I picked it up at the health store last week, and fell in love instantly. It even beat out Trader Joe’s, which was my previous fave. It has a very similar taste to the TJs AB, but is much thicker and less watery.

Look how creamy this stuff is:

004

(That pic was for you, HEAB)

Perfect for topping a macaroon:

005

And then stuffing said ‘roon into my face 😀

I had a few training appointments this morning, which were a lot of fun because the people I’m training right now crack me up. We were doing dumbbell upright rows (for shoulders) and the lady this morning said “You’re lucky I don’t have big tatas, or I would be wacking them with these dumbbells”. HIGHlarious 😉

I came back to the casa and got dinner into the slow cooker for the pilot, since I wont be home until 9:45 or so tonight.

006

Spicy Chicken in Peanut Sauce

-Spray slow cooker with nonstick spray and add a large chopped onion, 2 cans of diced tomatoes with green chiles (undrained) and 1 can (14.5 oz) of crushed tomatoes; season with 1.5 ts of cumin, 1 ts cinnamon, salt, pepper, and 2 tbs of honey (I used agave)

-Brown 8 boneless, skinless chicken breasts (seasoned with S&P) on med-high heat for 4 minutes

-Add the chicken to the slow cooker and cover with sauce

-Cover and cook on low for 7-8 hours

-Stir in 1/2 cup creamy peanut butter and serve over rice

Super easy, huh?? I put the chicken in the sauce and put the jar of peanut butter next to the slow cooker with the 1/2 measuring cup on top of the peanut butter jar, This way, when the pilot gets home, all he has to do is stir in the peanut butter, let it heat through, and feast out.

I went back to the gym to do Day 2 of this week’s shape up plan (those walk out push-ups were intense!) and then came back to the casa for lunch, which was super unique and way delicious.

Raw Sweet Potato and Beet Pesto pasta from this book

007

It’s just spiralized beet and 1/2 sweet potato, topped with an easy pesto sauce (EVOO, sea salt, garlic, pepper) and I added oregano and red chili flakes, grape tomatoes and raw goat cheddar for dessert.

Definitely an example of things you don’t think would go together AT ALL, but were perfect foodie harmony

008

Now I’m stuffed, and going to take a nap before teaching spin and training clients until later tonight. I hope you have a great day and I’ll see ya soon!

xoxo,

G

Grocery goodies and Chia Chili Cheese – The Fitnessista

Hey everyone! Hope your Monday has been bueno 😀 Mine definitely has been! The pilot was off work, so I got to chill with him before I had to train. I promised to post the grocery goodies for ya’ll but also wanted to post the rest of my Orlando foodie. Before we left yesterday, I got to feast two of my favorite places: Panera and Whole Foods!

At Panera I had lunch for bfast:

1/2 Mediterranean veggie on whole wheat with no feta, and 1/2 Greek salad with no feta and dressing on the side

021

I love how Panera uses real silverware. Fancy schmancy, eh? 😉

Later on, I had a lovely green juice while meandering around heaven on earth (aka Whole Foods)

This little baby had lemon, parsley, kale and green apple

022

I got some groceries (and actually didn’t buy nearly as much as usual) and also got some hot bar to munch on the way home

023

Miso slaw (my favorite!), roasted veggies, and salad topped with artichokes, hearts of palm, kalamata olives and baba ganoush.

Here’s what I picked up:

027

Thai coconuts, raw goat cheddar and Ezekiel tortillas for enchilada purposes

028

Nama shoyu, apricot spread, raw organic apple cider vinegar, Annie’s ketchup, lemon, Larabars

029

Mixed fruit, flax seeds, hot salsa, enchilada sauce

030

Produce! Avocados, cucumber, bell peppers, kale, juicy plum tomatoes, green apples, beets and carrots.

That’s it! Wow. I’m thinking the reason I didn’t go buck wild is because the health food store here actually has a lot of the items I love to buy. Thai coconuts and raw goat cheese are the things I need to travel for right now.

This morning, I started the day with a banana:

001

And a green juice:

002

It had 1/2 cucumber, 2 kale leaves, 1 green apple, 1 pear, handful of parsley and 1/2 lemon. I think I’ve finally gotten more juice hardcore because now I crave sour green juices more than sweet juices. The lemon and green apple really do the trick! I’m thinking it’s tied with the “Cullen juice” for first place 😉

I was kind of putzing around the casa for the first half of the day. We had a lot of fun this weekend but didn’t have very much down time, so we were moving a little on the slower side.

I made some cookies (oatmeal chocolate chip from Eat, Drink and Be Vegan):

003

Of course I tested one for quality purposes 😉

When it was time for lunch, I was way excited to try to make something new.

I took my favorite raw goat cheddar (same nutritionals and ingredients as the Alta Dena brand but around a dollar cheaper and has a better texture IMO):

006

And added strips of the raw goat cheddar with bell pepper, carrot, tomato, cilantro, sea salt and pepper into collard leaf wrappers:

007

After the roll up:

008

With an amazing dipping sauce…..

I bring you Chia Chili Cheese sauce! (Semi-inspired by Kristen’s Cheezy Hemp Nacho Sauce)

009

Check out that cheesy, creamy decadence 😉

To make the sauce, I soaked 2 tbs chia seeds in 1/2 cup water for 10 mins:

005

I was afraid of working with chia seeds (even though I’ve had a huge bag of them for a few months and haven’t touched them!) but since I know my good friend Heather is a fan, I figured I’d give it a whirl.

The chia seeds gelatinized and made an awesome base for the sauce!

Into the Vitamix went the gelled chia seeds and water, 1/2 yellow bell pepper, 1/2 ts chili powder, 2 tbs nutritional yeast, hefty sprinkle of sea salt, 1 clove garlic, pinch of pepper, and a diced dried chipotle chili (which can be omitted if you’re not a spicy fanatic like yours truly).

And here’s what I got:

010

It was soooooo good and would be even better with some raw chips dipped in there. Time for me to get some into the dehydrator 😉

The pilot and I went to the gym, where my friend Jeni and I chatted on the elliptical for 45 minutes. Classes at the base gym were canceled today because it was a “family day”. When we got back, we checked the mail and I was beyond stoked to see that Sarma’s new cookbook had arrived!

011

Since I pre-ordered, she signed my copy:

012

And included a free fig bar, which went directly into my mouth:

014

I already have some meals planned for this week from the new cookbook and I can’t wait to try them out!

Well it’s time for this girl to get into wind down mode (by catching up on your lovely blogs) and hit the hay.

Have a great night and I’ll see you in the morning!

Much love,

G

What’s your all-time favorite cookbook?? My top three are definitely “Eat, Drink and Be Vegan”, “Raw Food, Real World” and “Everyday Raw”. We’ll have to see how Sarma’s new book fits in there, but I can already tell I’m going to love it!

Morning with an old buddy – The Fitnessista

Hey hey hey 😀 Hope you’re having a great morning!

This morning I tried something new for bast:

Vanilla Chia Pudding from Sarma’s new cookbook that I got yesterday

002

Holy deliciousness, this stuff was AMAZING. With hemp milk, chia seeds, vanilla Stevia and cinnamon it was absolute perfection. Since I went veg I’ve definitely missed out on eating pudding because it used to be one my favorite snacks. This is a perfect replacement and makes such a light and delicious bfast, especially topped with fresh fruit.

003

I was surprised how thick the pudding was, even though I significantly reduced the recipe to make a 1-portion serving.

So good!

004

I also spent my morning with an old buddy, Dave Farmar. I consider him a friend since he gives me pep talks on life, but it’s been wayyyyy too long since I’ve done one of his podcasts! I finished it out, even though it was quite challenging and felt glorious afterwards 😀

To rewind to last night, the pilot and I had a super fast but way delicious meal when I got home from work.

I baked some salmon that I marinated in Annie’s BBQ sauce and served it with roasted veggies.

016

Eggplant, onion, artichokes, tomatoes, zucchini, garlic cloves, EVOO, oregano, sea salt and pepper.

The pilot had some couscous with his meal (cooked in chicken broth and seasoned with S&P, chili powder and garlic):

015

The whole meal took less than 30 minutes to cook –I did the veggies at 475 degrees for 15 minutes and then reduced the temp to 425 and added the fish for 8 minutes after pan searing it- and it was ahhhhhmazin’ (if I say so myself)   😉

This morning, before the chia pudding of justice and joy, I had a new Cullen juice:

001

It had 2 kale leaves, 1 apple, 1 beet and 1/2 lemon. Tangy and slightly sour, just the way I like it 😀

I don’t think I’ve mentioned it on the bloggy yet, but I stopped drinking coffee about a month ago. I think coffee has a TON of benefits, and I really do love it, but it got to the point where I was dependent on it. I was groggy and out of it until I had my morning Joe and didn’t like feeling addicted to it. So I went cold turkey and have been drinking morning juice instead. I had headaches like the dickens and was a little cranky in the morning for a few days, but it wasn’t nearly as difficult as I thought it would be. I’m still going to enjoy the occasional java joy, but I wanted to get myself away from *needing it* to survive the day. I have a loooong history with coffee (and it was my study elixir of choice when I was in undergrad and studying until 4am to wake up at 6…not healthy but way better than taking Adderall, which many of the students in my business school took) and am pretty stoked that I’ve decreased the need to have it every day. Juice has been doing the trick so far 😀

Another one of my addictions is gum, which I also went cold turkey with when I was chewing a piece of Orbit Mist and decided to randomly check out the ingredients. There was gelatin in there, so I chucked the piece out the window and didn’t have gum at all for about a month. That was a huge step for me because I ALWAYS have gum in my mouth –I just like to be minty fresh 😉 I came across this gum at Whole Foods which is sugarfree and has xylitol (which has oral health benefits) in there.

009

I have been HOOKED ever since! Has anyone else tried this gum??

Are you a gum and coffee kinda girl too? Are you trying to kick any habits??

Well it’s time for me to get the pilot’s dinner in the slow cooker, clean up around the casa, make a spin cd and off to work.

I’ll see ya tonight!

Much love,

G$
